
Peanut Butter Cauliflower “Oatmeal”

Ingredients
- 1 Cup unsweetened almond milk
- 1 protein powder
- 1 Tbsp PB2
- salt
- 1 Tsp cinnamon
- ¼ Tsp nutmeg
- 2 tsp Vanilla Extract
- 1.5 Cups cauliflower rice
- 1/2 Cup steel-cut oats Optional this recipe is amazing just Riced Cauliflower
Instructions
- Place water (almond milk), PB2, Protein Powder, cinnamon, nutmeg, and vanilla in a medium saucepan over medium-high heat. Bring to a simmer, uncovered, whisking occasionally.
- Add cauliflower rice. & oats. Simmer 10 minutes or until slightly softened.
- Remove oatmeal from heat. Serve immediately or store in an airtight container in the refrigerator for up to 5 days. Top with berries just before serving.
