Peanut Butter Cauliflower "Oatmeal"

Ingredients
 

  • 1 Cup unsweetened almond milk
  • 1 protein powder
  • 1 Tbsp PB2
  • salt
  • 1 Tsp cinnamon
  • ¼ Tsp nutmeg
  • 2 tsp Vanilla Extract
  • 1.5 Cups cauliflower rice
  • 1/2 Cup steel-cut oats Optional this recipe is amazing just Riced Cauliflower

Instructions
 

  • Place water (almond milk), PB2, Protein Powder, cinnamon, nutmeg, and vanilla in a medium saucepan over medium-high heat. Bring to a simmer, uncovered, whisking occasionally.
  • Add cauliflower rice. & oats. Simmer 10 minutes or until slightly softened.
  • Remove oatmeal from heat. Serve immediately or store in an airtight container in the refrigerator for up to 5 days. Top with berries just before serving.
