
Pineapple BBQ Chicken Bowl

Ingredients
- 1.25 lbs chicken breasts
- ¼ cup BBQ sauce vinegar based
- 2.5 sweet potatoes
- 5 cups broccoli
- 1.5 cups pineapple
BBQ Sauce
- 1 cup canned tomatoes
- 2 tbsp apple cider vinegar
- 3 tbsp bbq seasoning
- 3 tbsp honey
- 1/4 cup soy sauce
Instructions
FOR THE POTATOES
- Preheat the oven to 425°F.
- Chop the potatoes into a medium dice. spritz olive oil and roast for 20 minutes, flipping halfway through. Cook until you’ve reached you’re desired doneness.
FOR THE CHICKEN
- Heat a grill medium high heat. Lightly coat chicken breasts w BBQ sauce and grill until internal temp reaches 165 degrees F
- Cut it into one inch pieces and use remaining BBQ sauce to coat cooked chicken
- Steam the broccoli in the microwave until it is no longer frozen, drain any excess water.
PLATING
- This recipe makes 5 servings. Divide your ingredients evenly 5 ways. The pineapple doesn’t need to be cooked.
BBQ Sauce
- Combine Tomato, Apple Cider Vinegar, Soy Sauce, BBQ Seasoning, Honey into Vitamin and Blend till smooth
