Superfood Energy Bars

Ingredients
- 5 Medjool dates
- 1 cup dried cranberries
- 1/3 cup quinoa uncooked
- 1/2 cup almonds raw
- 1/2 cup pistachios raw
- 2 tbsp flaxseed
- 2 tbsp coconut oil
- 1 cup cacao nibs
- 1/2 cup pumpkin seeds
- 2 scoops protein powder
Instructions
- Combine all ingredients (excluding the cocoa nibs) in blender PULSE until mixture forms a thick paste consistancy. place parchment paper on sheet pan and spread mixture in pan evenly.
- Refrigerate for approx 30 minutes until form is solid.
- Melt Cocoa Nibs in double boiler until melted and then spread melted cocoa evenly over bar mixture.
