Ingredients
 

  • 5 Medjool dates
  • 1 cup dried cranberries
  • 1/3 cup quinoa uncooked
  • 1/2 cup almonds raw
  • 1/2 cup pistachios raw
  • 2 tbsp flaxseed
  • 2 tbsp coconut oil
  • 1 cup cacao nibs
  • 1/2 cup pumpkin seeds
  • 2 scoops protein powder

Instructions
 

  • Combine all ingredients (excluding the cocoa nibs) in blender PULSE until mixture forms a thick paste consistancy. place parchment paper on sheet pan and spread mixture in pan evenly.
  • Refrigerate for approx 30 minutes until form is solid.
  • Melt Cocoa Nibs in double boiler until melted and then spread melted cocoa evenly over bar mixture.
