Ingredients
- 4 1/2 cups quinoa 1 1/2 cups uncooked
- 1 15- ounce chickpeas drained and rinsed
- 1/2 cucumber seeded and chopped
- 1 cup tomatoes quartered
- 1/2 cup bell pepper diced
- 1/4 cup onion diced
- 1/2 cup Kalamata olives sliced
- 3 cups mixed greens arugla
- 1 garlic minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt & pepper
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the salad ingredients.
- In a small bowl, whisk together the dressing ingredients. Pour over salad and stir to evenly coat.
