Ingredients
 

  • 4 1/2 cups quinoa 1 1/2 cups uncooked
  • 1 15- ounce chickpeas drained and rinsed
  • 1/2 cucumber seeded and chopped
  • 1 cup tomatoes quartered
  • 1/2 cup bell pepper diced
  • 1/4 cup onion diced
  • 1/2 cup Kalamata olives sliced
  • 3 cups mixed greens arugla
  • 1 garlic minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt & pepper
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large bowl, combine the salad ingredients.
  • In a small bowl, whisk together the dressing ingredients. Pour over salad and stir to evenly coat.
