
Honey Sriracha Turkey, Broccoli Quinoa Bowl

Ingredients
- olive oil
- 1 lb ground turkey
- 2 egg whites beaten
- 1 1/4 teaspoon kosher salt divided
- 3 cups broccoli cut into small florets
- 2 teaspoons sesame oil
- 1 cup quinoa
- 2 tablespoons honey
- 2 tablespoons sriracha
- 1 teaspoon rice wine vinegar
- 1 teaspoon sesame oil
- 2 scallions sliced
- 1 teaspoon black and white sesame seeds or as desired
- 1 medium bell pepper
Instructions
- Sauce in medium bowl whisk honey, sriracha sauce, rice vinegar, and sesame oil together until smooth.
- Cook 1 cup quinoa per package instructions
- Preheat oven to 425F. Place broccoli on cooking sheet. Bake in the oven for 15 minutes.
- While broccoli is roasting Cook ground turkey on stovetop in pan until cooked through completely.
- Combine cooked ground turkey & broccoli and drizzle with 2 teaspoons sesame oil, season with 1/2 teaspoon salt and pepper, to taste
- Add the ground turkey, broccoli combination and toss in sauce to coat.
- Serve over 1/4 cup cooked quinoa, top with scallions and sesame seeds.
