Honey Sriracha Turkey, Broccoli Quinoa Bowl

Ingredients
 

  • olive oil
  • 1 lb ground turkey
  • 2 egg whites beaten
  • 1 1/4 teaspoon kosher salt divided
  • 3 cups broccoli cut into small florets
  • 2 teaspoons sesame oil
  • 1 cup quinoa
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 2 scallions sliced
  • 1 teaspoon black and white sesame seeds or as desired
  • 1 medium bell pepper

Instructions
 

  • Sauce in medium bowl whisk honey, sriracha sauce, rice vinegar, and sesame oil together until smooth.
  • Cook 1 cup quinoa per package instructions
  • Preheat oven to 425F. Place broccoli on cooking sheet. Bake in the oven for 15 minutes.
  • While broccoli is roasting Cook ground turkey on stovetop in pan until cooked through completely.
  • Combine cooked ground turkey & broccoli and drizzle with 2 teaspoons sesame oil, season with 1/2 teaspoon salt and pepper, to taste
  • Add the ground turkey, broccoli combination and toss in sauce to coat.
  • Serve over 1/4 cup cooked quinoa, top with scallions and sesame seeds.
