
Chicken Spinach Burger w Cauliflower NOPotato Salad

Ingredients
- 1 lb chicken breasts
- 4 oz. spinach
- 1 c. cauliflower rice
- 1/2 onion
- 1 clove garlic
- 2 green onions roughly chopped
- 2 tsp garlic salt
- 1/4 cup hemp seeds
- 2 tbsp balsamic vinegar
- 2 tsp soy sauce
- 1 tsp lemon juice
- 1/2 tsp chili powder
Cauliflower NO Potato Salad
- 1 tbsp apple cider vinegar
- 2 tbsp dill pickle relish
- 2 tbsp dijon mustard
- 1 tsp paprika
- 1 tsp celery salt
- Sea Salt & Pepper
- 1/2 cup onion
- 1 cup celery
- 4 cups cauliflower whole florets
- 1/2 cup non fat greek yogurt
- 1 tbsp mayonnaise fat-free
Instructions
- First, throw spinach, onions, garlic and green onions this into a food processor, then stir this mixture into 1 lb. ground chicken.
- Add: 2 Tbsp. balsamic vinegar 2 tsp. soy sauce 1 tsp lemon juice
- 1/2 tsp chili powder with 1/4 cup shredded cheddar cheese.
- Then add about 1/4 c. of Panko (NO EGG!) and riced cauliflower, mixed it all together, and formed them into patties. Refrigerated for about 2 hours prior to dinner. It allowed all the garlic and onion to release into the meat.
- Cook on Grill or Skillet and Serve
Cauliflower NOPotato Salad
- Steam Cauliflower till fork tender (but watch that Shit you don’t want it too cooked) Rinse in ice cold water drain and you're ready to add all the remaining ingredients.Once mixed chill for approx 1 hr this one gets better over time so the 2nd day the flavor is amazing
