
Chicken Pad Thai Zoodles

Ingredients
- 8 oz chicken breasts Marinade in Lime/Soy/Ginger
- 2 zucchini
- 1 cup cabbage
- 1 cup bell pepper
- 2 scallions thinly sliced
- ¼ cup peanut
- 2 tablespoons PB2
- lime juice
- 2 teaspoons tamari gluten-free or low sodium soy sauce
- 1 teaspoon sriracha or asian hot sauce of choice
- ½ teaspoon ginger
- water
Instructions
For Sauce:
- Combine PB2 Powder PB, Lime Juice, Gluten-free tamari (or low sodium soy sauce), Sriracha sauce (or asian hot sauce of choice), ground ginger. Whip by hand or in small bowl or in mixer.
Marinade Chicken:
- Cut Chicken into Thin Strips (Marinade in Lime/Soy/Ginger) let set for approx 1 hr. Grill on Flat Top or Skillet till cooked too temp.
Pad Thai Base:
- Combine Shredded Cabbage, Peppers, Zoodles, Scallions and Peanuts
