Ingredients
 

  • 8 oz chicken breasts Marinade in Lime/Soy/Ginger
  • 2 zucchini
  • 1 cup cabbage
  • 1 cup bell pepper
  • 2 scallions thinly sliced
  • ¼ cup peanut
  • 2 tablespoons PB2
  • lime juice
  • 2 teaspoons tamari gluten-free or low sodium soy sauce
  • 1 teaspoon sriracha or asian hot sauce of choice
  • ½ teaspoon ginger
  • water

Instructions
 

For Sauce:

  • Combine PB2 Powder PB, Lime Juice,  Gluten-free tamari (or low sodium soy sauce), Sriracha sauce (or asian hot sauce of choice), ground ginger. Whip by hand or in small bowl or in mixer.

Marinade Chicken:

  • Cut Chicken into Thin Strips (Marinade in Lime/Soy/Ginger) let set for approx 1 hr. Grill on Flat Top or Skillet till cooked too temp.

Pad Thai Base:

  • Combine Shredded Cabbage, Peppers, Zoodles, Scallions and Peanuts
