Makes 6 Servings (12 CUPS)

Ingredients:
- 1 can (14 oz) plum tomatoes
- 4 C (32 oz) chicken broth
- 1 lb chicken boneless skinless
- 2 bell peppers, chopped
- 1 C corn kernels frozen or fresh
- 2 C raw riced cauliflower
(Optional brown rice) - Epicure Pulled Chicken Seasoning
Preparation:
Place Chicken Breasts in base of Crockpot. Pour tomatoes (including juice) into slow cooker, add peppers, corn and raw riced cauliflower into crockpot. Sprinkle Epicure Pulled Chicken Seasoning packer over ingredients.
Stir in broth cover and cook for approx. 3 hours on high heat in crockpot until chicken is cooked through and tender. Shred chicken in crockpot, stir and serve!
BONUS: Make this recipe in under 30 minutes by using Rotisserie Chicken from the store. Dump all ingredients into pot on your stovetop, bring to a boil and then let simmer for 20 minutes!
Ladle into bowls and garnish with toppings, if desired.
