Cheeseburger Soup
It’s great to come home to a warm bowl of low carb crock pot cheeseburger soup. Just prep the ingredients in the slow cooker before leaving.
10 Servings: 22g Fat, 4.2g Net Carbs, 30g Protein
Ingredients
- 1 tablespoon olive or avocado oil
- 4 cloves garlic
- 1 small onion chopped
- 1.5 pound lean ground beef
- 2 cups diced celery about 8.3 oz
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 32 ounces beef broth
- 2 cups cheddar cheese shredded
- 1 1/2 cups almond milk
- 1/4 cup sour cream
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon pepper or to taste
- salt and pepper to taste
- 4 tbsp Dejon mustard
- 1 pound cauliflower florets fresh or frozen

Instructions
- Cook garlic and onion in skillet with hot oil until fragrant.
- Add ground beef and cook until browned. Remove from heat and drain oil (if needed)..
- Transfer cooked beef into a 4 or 6 quart crock pot. Add remaining ingredients
- Stir to combine ingredients. Cook on low 4-6 hours.
