This has been my go to recipe for awhile! I just tweaked it slightly to my taste. It is great plain, or dressed up like I did this time with dried cranberries and almonds.
6 cups old fashioned (regular) oats
1 cup unsweetened coconut
3/4 c. whole wheat flour
pinch of salt
2 T. cinnamon
1/2 cup water
1/2 cup coconut oil, melted
1 cups honey
2 1/2 T. vanilla
3/4 cup dried cranberries or raisins (optional)
1 cup slivered almonds (optional–I just pulsed some whole raw almonds in my Blendtec and that worked too)
Preheat over to 225. Line a jelly roll pan or a couple 9×13 pans with parchment or a silpat mat. In a large bowl, combine the dry ingredients (except dried fruit and nuts, if using). In another bowl, mix together the wet, and pour over dry. Combine until there are no dry spots. Spread onto prepared pan(s). Bake for about 1 1/2-2 hours total, stirring gently about every 20 minutes. After about an hour, add the dried fruit and nuts (if using) Continue cooking until everything is a nice golden color–the granola will continue to crisp up after it cools. Store in an airtight container! This keeps for several weeks!
