
Sweet Potato Chickpea Coconut Curry Stew

Ingredients
Stew:
- 1 tablespoon olive oil
- 1 cup onion diced
- 1 .5 cups chickpeas rinsed and drained
- 3 cup carrots
- 3 cup celery
- 1/2 cup sweet potatoes
- 1 cup cauliflower
- 1 cup sweet peppers
- 3 cups spinach
Sauce:
- 1 tablespoon ginger grated fresh (or 1 teaspoon ground ginger)
- 4 garlic cloves minced
- 1 1/2 tbsp curry powder
- 2 tsp garam masala
- 1 15 oz tomatoes can fire-roasted with their juices
- 1 13 oz unsweetened organic lite coconut milk
Instructions
- Keep it simple, chop that shit up and toss it in a crockpot. Pour the Sauce over the top and COOK until veggies are tender. Add Chickpeas in the last 30 mintues before cooking!
