Ingredients
Meatballs:
- 1 pound ground chicken or lean ground turkey
- 1 egg
- 1 cup cauliflower rice
- ¼ cup onion very finely diced white
- 1/2 cup carrots finely shredded
- 1 jalapeno seeded and diced
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon cayenne
- ½ teaspoon salt
- black pepper
- 1 tablespoon olive oil
- 4 cups broccoli
Sauce:
- ½ cup sriracha
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ¼-½ teaspoon red pepper flakes depending on spice preference
For the rice:
- 1 cup brown rice cooked
- 5 oz light coconut milk
- 1 cup pineapple heaping cup frozen or fresh
- 1 red bell pepper julienned
- For garnish:
- Scallions green part of green onion only
