Chicken & Cashew Stir Fry with Zoodle Noodles

Ingredients
 

  • 5 large zucchini spiralized
  • 1 large carrots julienned
  • 1 small onion finely diced
  • 2 cups spinach
  • 1 tsp. olive oil
  • 1.5 lb chicken breasts chopped (Rotisserie chicken works great!)
  • 1/4 cup cashews chopped
  • 2 tbsp. soy sauce
  • 3 tbsp. Yoshida’s Gourmet sauce
  • 2 cloves garlic minced
  • 1 tsp. cornstarch
  • 1/2 tsp. red pepper flakes
  • 1 cup celery chopped
  • 2 cups broccoli

Instructions
 

  • Use the Spiralizer to cut the zucchini into noodles (peeling the zucchini is optional).
  • Mix all of the sauce ingredients and set aside.
  • In a large pan, heat the olive oil on medium heat, and lightly saute the carrots, celery and onions and broccoli until translucent.
  • Add the zucchini noodles and cook for 3 minutes.
  • Add the chicken, sauce and spinach and cook until the chicken is warm and the spinach is wilted.
  • Serve warm and top with chopped cashews.
