
Chicken & Cashew Stir Fry with Zoodle Noodles

Ingredients
- 5 large zucchini spiralized
- 1 large carrots julienned
- 1 small onion finely diced
- 2 cups spinach
- 1 tsp. olive oil
- 1.5 lb chicken breasts chopped (Rotisserie chicken works great!)
- 1/4 cup cashews chopped
- 2 tbsp. soy sauce
- 3 tbsp. Yoshida’s Gourmet sauce
- 2 cloves garlic minced
- 1 tsp. cornstarch
- 1/2 tsp. red pepper flakes
- 1 cup celery chopped
- 2 cups broccoli
Instructions
- Use the Spiralizer to cut the zucchini into noodles (peeling the zucchini is optional).
- Mix all of the sauce ingredients and set aside.
- In a large pan, heat the olive oil on medium heat, and lightly saute the carrots, celery and onions and broccoli until translucent.
- Add the zucchini noodles and cook for 3 minutes.
- Add the chicken, sauce and spinach and cook until the chicken is warm and the spinach is wilted.
- Serve warm and top with chopped cashews.
