Veggie Quinoa Pilaf w Grilled Chicken

Ingredients
 

  • tsp. olive oil
  • ½ carrot⁣⁣s diced
  • ½ zucchini diced
  • ¼ onion diced
  • ¼ bell pepper diced
  • ¼ tsp. paprika
  • 1 cumin
  • ¼ tsp. turmeric
  • 1/2 cup quinoa cook according to package
  • tsp. lemon zest
  • tsp. lemon juice
  • 4 oz chicken breasts

Instructions
 

  • Heat oil in medium saucepan over medium-high heat. Add carrot, zucchini, onion, bell pepper, paprika, cumin, and turmeric; cook, stirring frequently, for 5 minutes, or until tender. Add quinoa, zest, lemon juice, and parsley to cooked vegetables; heat over medium heat for 2 to 3 minutes, or until heated through. Fluff with a fork and serve.
  • Roast chicken in over 375 approx 30 minutes or until fully cooked.
  • Cooked Quinoa—Prep Quinoa as directed on package. Remove from heat and let sit for 5 mins. Fluff with fork. Store left overs in a sealed container in the fridge.
