
Veggie Quinoa Pilaf w Grilled Chicken

Ingredients
- 1½ tsp. olive oil
- ½ carrots diced
- ½ zucchini diced
- ¼ onion diced
- ¼ bell pepper diced
- ¼ tsp. paprika
- 1 cumin
- ¼ tsp. turmeric
- 1/2 cup quinoa cook according to package
- 1½ tsp. lemon zest
- 1½ tsp. lemon juice
- 4 oz chicken breasts
Instructions
- Heat oil in medium saucepan over medium-high heat. Add carrot, zucchini, onion, bell pepper, paprika, cumin, and turmeric; cook, stirring frequently, for 5 minutes, or until tender. Add quinoa, zest, lemon juice, and parsley to cooked vegetables; heat over medium heat for 2 to 3 minutes, or until heated through. Fluff with a fork and serve.
- Roast chicken in over 375 approx 30 minutes or until fully cooked.
- Cooked Quinoa—Prep Quinoa as directed on package. Remove from heat and let sit for 5 mins. Fluff with fork. Store left overs in a sealed container in the fridge.
