
4 Mini Pizza Crusts
Approx. 305 Calories per Mini Pizza Crust
Ingredients
- 2 Medium Sweet Potato’s
- 1 Cup Almond Flour
- 1/4 Cup Arrowroot
- 2 Tbsp Ground Flaxseed
Instructions
- Steam or Bake Sweet Potato’s until very soft and cooked through
- Once Sweet Potato’s are cooled enough to handle, scoop into mixer or hand mash/puree.
- Combine Sweet Potato Mash with Almond Flour, Arrowroot (Cornstarch), Salt and Ground Flaxseed. Mix well until completely combined together.
- Preheat Oven to 425 and line baking sheets with parchment paper
- Take about 1/2 cup of dough and place it on one side of the parchment paper lined pan and press down or roll into a circle with your hands. (Repeat x 4 mini crusts)
- Bake for about 20 minutes, until thin crusts are golden and crisp.
Remove from Oven and Top with Sauce, Vegan Cheese, Veggies and anything you would like. Pop back in the over for approx. 10 minutes to cook veggies, cheese and toppings.
