MAKES 4 SERVINGS
Ingredients
• 1 cup quinoa, rinsed(2 cups water)
• 2 tbsp Herb & Garlic Dip Mix
• 2 tbsp raw honey
• 4 tsp fresh lime juice
• 1 tbsp Dijon mustard
• 1/2 tsp ground cayenne pepper, optional
• 2 cups spinach, finely chopped
• 1/2 cup naturally sweetened dried cranberries, chopped (alternative apple)
• 1/2 cup raw unsalted pecans, chopped
• 1/2 Sweet Potato diced

Preparation
1. cook quinoa: In a small saucepan, bring quinoa and 2 cups water to a boil. Reduce heat to low, cover and simmer for 10 minutes. Remove from heat; fluff with a fork.
2. Microwave 1/2 sweet potato to cook through.
3. In a small bowl, whisk together remaining honey, mustard, 2 tbsp Herb & Garlic Dip Mix and remaining pinch each salt and pepper. (Optional dash of lime juice)
4. Combine quinoa, spinach, apples, sweet potato and pecans; toss to coat.
5. Serve with a yummy Protein Turkey Breast, Pork Chop or even Chicken! This is even better as a left over!
