Blueberry Zucchini Smoothie

Have you ever considered putting a zucchini in a smoothie?

I tried it recently and now no breakfast smoothie goes zucchini-less. A great source of fiber, manganese, antioxidants, vitamins C, B and A (with barely any calories — 21 per cup!), zucchini are practically tasteless, which makes them an amazing addition to any blended creation.

Go grab some local zucchini at your farmers market, and get blendin’! If it’s organic, you don’t even need to peel the skin off.
