Ingredients
 

  • 2 sweet potatoes peeled, cut into bite-sized pieces
  • 1 Tbsp. olive oil
  • 1 sea salt or Himalayan salt
  • 1 black pepper
  • Nonstick cooking spray

Instructions
 

  • Preheat oven to 350° F.
  • Combine sweet potatoes and oil in a medium bowl; mix well.
  • Season with salt and pepper; mix well.
  • Layer sweet potatoes on a baking sheet lightly coated with spray.
  • Bake for 10 minutes;
  • turn and bake for an additional 10 minutes, or until sweet potatoes are tender-crisp.
