MEDITERRANEAN GREEK CHICKEN BURGERS

Ingredients
 

  • 1.5 lbs chicken breasts
  • 1.2 tablespoons garlic
  • 1 teaspoon cumin
  • 2 tsp oregano
  • 1/2 cup kalamata olives
  • 6 oz feta cheese
  • 1.5 cups spinach
  • salt & pepper
  • 6 cups spinach
  • 3 medium cucumber
  • 2 cups tomatoes
  • 6 tbsp greek yogurt
  • 1/2 medium onion
  • 6 whole wheat pita
  • 1.5 cups cauliflower rice

Instructions
 

  • Get Grill to Temp
  • Add all ingredients to large bowl and mix together thoroughly. Scoop out 4 oz of meat, roll and flatten patty form
  • Grill approx 3-4 minutes, until edges are brown and seared, then flip patty over. Cook for additional approx 10 minutes till internal temp is 165 degrees F. You can also bake them on a baking sheet if you prefer to not grill.
  • While burgers are cooking, toss spinach, cucumber, red onion, sliced tomatos to make a yummy salad for your burger base.
  • Serve with a YUMMY side of Tetziki Sauce and ENJOY
