  • 1 egg
  • 1 cup cauliflower rice
  • ¼ cup onion very finely diced white
  • 1/2 cup carrots finely shredded
  • 1 jalapeno seeded and diced
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon cayenne
  • ½ teaspoon salt
  • black pepper
  • 1 tablespoon olive oil
  • 4 cups broccoli

Sauce:

  • ½ cup sriracha
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon salt
  • ¼-½ teaspoon red pepper flakes depending on spice preference

For the rice:

  • 1 cup brown rice cooked
  • 5 oz light coconut milk
  • 1 cup pineapple heaping cup frozen or fresh
  • 1 red bell pepper julienned
  • For garnish:
  • Scallions green part of green onion only
