Chocolate Chip Protein Mini Muffins

Ingredients
 

  • 2 Ripe Bananas
  • 8 Tbsp PB2 mixed w equal parts water (Optional Almond/PB 1 Cup)
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 Tbsp Honey
  • 1/2 tsp Baking Powder
  • 1/4 cup sugar free chocolate chips

Instructions
 

  • Mash Bananas in Food Processor
  • Add Eggs, Vanilla & Honey
  • Combine PB2 Powder with Equal Parts Water combine until smooth then add to Banana mixture
  • Slowly Add Dry Mix (Almond Flour and Baking Powder) combo to the wet Banana Mixture
  • Portion into 12 equal size mini muffins and then top with 4 unsweetened chips to each muffin tin
  • Bake until firm approx 15 minutes
