Before you start cooking you’ll want to chop all of your vegetables first. This will save time. You’ll also want to start a pot of water to boil for the sweet potatoes. Cut the onion and bell peppers into a small dice. Cut the sweet potatoes into a medium dice.
Add the sweet potatoes to the boiling water and cook until soft. Drain the water and set aside.
Heat 1 Tbsp of olive oil over medium high heat in a large pot. Add in the peppers and onions and cook for 3-5 minutes or until soft.
Push the pepper and onion mixture to the side and add an additional 1 Tbsp of olive oil to the pot. Lightly season the turkey with salt and pepper and add to the pot. Cook until browned.
Add the crushed tomatoes, petite diced tomatoes, beans, sweet potatoes, 2 Tbsp chili powder, and 1 tsp cayenne pepper to the pot. Bring to a boil and taste test. Season with salt and pepper and adjust seasonings as needed.
This recipe makes 5 servings. Divide all of your ingredients evenly between 6 containers. Top each dish with Greek yogurt and green onions.
