Sweet Potato Turkey Chili

Ingredients
 

  • 1 ½ lbs ground turkey 93/7
  • 14.5 oz pinto beans
  • 14.5 oz canned tomatoes
  • 1 sweet potatoes
  • ½ onion
  • 1 green bell pepper
  • 1 bell pepper
  • 2 Tbsp chili powder
  • 1 tsp cayenne pepper
  • 2 Tbsp olive oil
  • salt & pepper

Instructions
 

  • Before you start cooking you’ll want to chop all of your vegetables first. This will save time. You’ll also want to start a pot of water to boil for the sweet potatoes. Cut the onion and bell peppers into a small dice. Cut the sweet potatoes into a medium dice.
  • Add the sweet potatoes to the boiling water and cook until soft. Drain the water and set aside.
  • Heat 1 Tbsp of olive oil over medium high heat in a large pot. Add in the peppers and onions and cook for 3-5 minutes or until soft.
  • Push the pepper and onion mixture to the side and add an additional 1 Tbsp of olive oil to the pot. Lightly season the turkey with salt and pepper and add to the pot. Cook until browned.
  • Add the crushed tomatoes, petite diced tomatoes, beans, sweet potatoes, 2 Tbsp chili powder, and 1 tsp cayenne pepper to the pot. Bring to a boil and taste test. Season with salt and pepper and adjust seasonings as needed.
  • This recipe makes 5 servings. Divide all of your ingredients evenly between 6 containers. Top each dish with Greek yogurt and green onions.
