Sweet Potato Brussel Sprout Hash

Ingredients
 

  • 1 large sweet potatoes cut into 1/2-inch cubes
  • 1 tablespoons olive oil
  • salt & pepper
  • 1/2 pound brussels sprouts trimmed and cut in half
  • 1/2 large onion large diced
  • 4 egg
  • 4 cups spinach

Instructions
 

  • Sweet Potato - Add the sweet potatoes to a large baking sheet. Toss them with 1 tablespoon of oil and season with salt and pepper. Spread into a single layer. Roast for 20 minutes.
  • Veggie Hash - Toss the Brussels sprouts, onion and bell pepper (optional) in the 1 tablespoon of oil Season with salt and pepper. Place all together in hot frying pan until onions golden and Brussels start to cook tender add sweet potatoes and continue to cook for approximately 2 minutes.
  • Eggs for Protein - Crack each egg on top of the veggies evenly spaced apart and not touching the sides of the pan. Season with salt and pepper place top on frying pan and cook egg until the whites are set but the yolks are runny. Test the egg whites by poking them with a knife.
