Ingredients
 

  • 1 Tbsp. olive oil
  • 1 Tbsp. bell pepper
  • 1 Tbsp. bell pepper
  • 1 Tbsp green bell pepper
  • 1 Tbsp. onion
  • 3 egg whites
  • 1 whole wheat tortillas 8 inch
  • 1 slice turkey bacon chopped
  • black pepper
  • 2 Tbsp. salsa

Instructions
 

  • Heat oil in medium nonstick skillet over medium-high heat.
  • Add bell peppers and onion; cook, stirring frequently, for 3 to 4 minutes or until soft.
  • Add eggs; cook, over medium heat, stirring
  • frequently, for 2 to 3 minutes, or until eggs
  • are set.
  • Top tortilla with egg mixture, turkey bacon,
  • and pepper (if desired).
  • Roll tortilla burrito-style.
  • Serve with salsa.

Notes

UPF: 1/2 Green, 1 Yellow, 1 Red, 1 tsp
2B: A great breakfast option. Add veggies or a side salad for lunch.
