Cilantro Lime Brown Rice
1.5cupbrown ricecooked

2tablespoonslime juice
Salsa
2cupstomatoes
1/2cuponion
3clovesgarlic
1/8teaspooncumin
1/4cupcilantro
salt & pepper
Chicken
1poundschicken breasts
2cupschicken broth
1teaspoononion powder
1teaspoongarlic powder
1/2teaspooncumin
1teaspoonoregano
salt & pepper
Adobo Sauce
2tbspadobo sauce
.5tbsphoney
.5tbspcocoa powder unsweetened
Instructions
Cilantro Lime Rice
Cook brown rice as directed on package w water
Add in garlic and cook for an additional minute.
Fluff with a fork and stir in cilantro and lime juice.
Salsa
Combine all of the ingredients in a medium bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
Chicken
Add all of the ingredients including the chicken breast, broth & seasoning
When you are ready to cook preheat the grill to 350 degrees
Allow the chicken to rest on the cutting board before cutting into it, I usually wait 5 minutes.
Shred chicken and mix with Adobo Sauce
Assembly
When you are ready to assemble layer the cilantro lime rice, black beans, chicken, salsa and shredded lettuce. Top with any other favorite topping. I like jalapeños and sour cream. Serve immediately or package into airtight container for meal prep.
