Chocolate Truffles

Ingredients
- 6 oz dark chocolate chips
- 1/3 cup avocado mashed about 1 small avocado
- 1/2 tsp vanilla extract
- 1/8 tsp salt a pinch
- 2 tbsp cocoa powder peanut butter powder, or coconut flakes
- 2 tbsp unsweetened shredded coconut
Instructions
- ??Melt chocolate chips with vanilla and salt in a double boiler or microwave. Mash avocado or process in food processor until no lumps appear. Stir in chocolate mixture and taste, adding a bit of maple syrup if desired. Refrigerate until slightly firm – about 20-30 minutes. Using a small spoon, carefully form into balls and gently roll in topping of choice. Place on parchment and store in refrigerator or freezer until ready to enjoy.
