Vegan Chickpea Cookie Dough Bites

Ingredients
- 15 oz chickpeas rinsed and drained
- 5 Medjool dates
- 1/2 cup peanut butter creamy
- 1/4 cup rolled oats
- 1/4 cup maple syrup honey
- 1/2 cup dark chocolate chips vegan
- 1 tsp vanilla
- salt & pepper
Instructions
- Blend all ingredients in food processor except chocolate chips until smooth.
- Fold in chocolate chips until combined.
- Roll into 1-inch balls (dampen hands to prevent sticking) and add onto a plate. If you want, add more chocolate chips to the outside of the balls like I did.
- Garnish with sea salt.
- Allow bites to firm up in fridge for 30 minutes.
- Serve and enjoy!
- Notes
- Store in fridge in a container or on a covered plate for up to 4 days. You can also freeze them!
